These Crispy Baked Parmesan Zucchini Fries are the snack you did not know you needed. Golden, crunchy on the outside and tender inside, they are coated in a savory mixture of Parmesan, breadcrumbs, and Italian herbs, then baked until irresistibly crispy. Served with marinara sauce for dipping, they are a guilt-free alternative to regular fries.

Ingredients

  • 4 medium zucchini
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 3/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray
  • Marinara sauce for dipping

Instructions

  1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper and set wire racks on top. Spray with cooking spray.
  2. Cut zucchini into 3-inch sticks, about 1/2 inch thick.
  3. Mix panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper in a shallow dish.
  4. Dip each zucchini stick in beaten egg, then press into the breadcrumb mixture, coating all sides.
  5. Arrange on wire racks in a single layer. Spray tops lightly with cooking spray.
  6. Bake for 18-22 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve immediately with warm marinara sauce for dipping.

Recipe Tips

The wire rack is essential for crispiness — it lets air circulate around the fries. Salting zucchini sticks for 10 minutes and patting dry before coating will prevent sogginess. Serve immediately for the best texture.
