These Crispy Baked Parmesan Zucchini Fries are the snack you did not know you needed. Ingredients
- 4 medium zucchini
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 3/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
- Marinara sauce for dipping
Instructions
- Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper and set wire racks on top. Spray with cooking spray.
- Cut zucchini into 3-inch sticks, about 1/2 inch thick.
