Italians say the water should “taste like the sea.” Use at least 1 tablespoon of coarse sea salt per litre of water. This is your only chance to season the pasta itself โ don’t skip this step. -
2Never Rinse Your Pasta
Rinsing washes off the surface starch that helps sauce cling to every strand. Drain it, toss it immediately into the sauce, and add a splash of pasta water to bring everything together. -
3Use the Right Tomatoes
For uncooked or lightly cooked sauces, use San Marzano DOP tomatoes (look for the certification on the can). They’re sweeter, less acidic, and will transform your marinara from good to extraordinary. -
4Low & Slow for Bolognese
A true Bolognese needs at least 2 hours of very low heat. The meat should barely simmer โ not boil. The longer you cook it, the more the flavours meld and deepen. Plan for a Sunday afternoon. -
5Buy a Block of Parmigiano-Reggiano
Pre-grated cheese is a convenience product โ it contains anti-caking additives that prevent it from melting properly. A block lasts weeks in the fridge and costs surprisingly little. Grate it fresh every time.
